This is a simple dish, but can really liven up a barbeque as an entrée.
Ingredients:
500g squid tube – whole or in rings
1/3 cup lemon juice
1/3 cup extra virgin olive oil
1 clove garlic
One tablespoon chopped parsley.
Method:
Cut squid into 2cm rings, if it isn't already in rings. Drop the rings into rapidly boiling water, reduce heat and simmer 10-15 mins or until squid is tender. Drain.
Combine lemon juice & oil, add squid, cover and refrigerate overnight.
The next day add garlic & parsley to the marinade, mix well, let stand at least 2 hours. Serve in the marinade.
