Instant fruit 'ice cream'

Got a glut of ripe mangoes that fell off the tree during the recent strong winds and flood? Here’s a great way to use them up.

You’ll need a masticating style juicer to make these. They’re slower juicers that work by slowly crushing food to release its juices. I haven an Oscar - but lots of other brands are out there.


Ripe mangoes, diced; or ripe bananas, sliced.


Cut up and freeze the fruit.

Set up your masticating juicer with the nut butter attachment.

Push the frozen fruit through. You could use just banana, or just mango, or a combination of both. It will emerge with a delightful ice cream texture. You can return it to the freezer, shape it into moulds, put in an ice cream cone, or just eat it straight away. A healthier ice cream!
