Guacamole

2 medium avocados
1/3 cup onion, chopped
1 small tomato, diced
1/2 cup cucumber, diced
1/3 cup red bell pepper, diced
1/2 lemon, juiced
1 tbsp. red bell pepper powder (optional)

1/4 tsp. Celtic sea salt


1) Mash or cube the avocados and mix with the vegetables and spices.

Serves 2. Best eaten when freshly made, but keeps for 2 days in the refrigerator. When storing, leave the avocado pits in the Guacamole to help maintain freshness. Serve on a bed of leafy greens.
