This colorful vegetable might not actually make you see in the pitch dark, but its really good for your eyes and overall vision.

The carrot is one of the richest sources of phytonutrients called carotenoids, which are responsible for its color and for a host of health benefits. These nutrients are what make carrots so good for the eyes, particularly for seeing in poor light. Carrots have tough cell walls that do not give up their nutrients easily. To get the best nutrient value, they should be juiced or cooked rather than eaten raw. Cooking them with oil allows the body to use more beta carotene.

Interesting Fact: Eating just one carrot a day might half a smoker’s risk of developing lung cancer.
