I got this recipe from About.com . I changed it a little but it came out great....in my humble opinion.
My revised recipe
Ingredients:
1 cup canned black beans
1 carrot, grated
1/2 onion, diced
3 potatoes, grated
4 scallions, chopped
1 cup corn
4 cloves garlic minced
!-2 TBS GF Worchestershire sauce or Soy sauce
seasoning to taste (these were bland at first)
salt and pepper to taste
oil for frying
Preparation:
Grate carrots and potat oes in processor. then combine rest of ingredients in processor and blend.
Shape the mixture into patties. Heat about two tablespoons of olive oil and cook each patty until the veggie burgers are done, about 3 minutes on each side.
(I just spooned them on the griddle and cooked slow.)
Doughnut Holes made with Pamelas Pancake Mix
Go to Pamelas site and the recipe is there with lot's of others.
Doughnuts in an oil fryer
4-1/4 cups Pamela's Baking & Pancake Mix, plus some for dough handling 1/4 cup melted butter 2/3 cup milk or buttermilk (optional: add 1 tablespoon vinegar or lemon juice to milk) 2 eggs 1 cup white or brown sugar 2 teaspoons vanilla 1/4 teaspoon nutmeg (optional) 1/4 teaspoon cinnamon (optional)
Mix all ingredients together. Dust counter with additional Pamela's Baking & Pancake Mix, scoop out about 1/3 cup dough at a time. Coat top and bottom with Pamela's Baking & Pancake Mix. With thumb, pierce center of dough and create doughnut shape. Preheat oil in fryer to 365° to 375° and carefully lower doughnut into oil. Fry for approximately one minute on each side.
