Real Food Challenge Week 2 recap, and Weekly Menu

This month I’m participating the Real Food Challenge hosted by Not Dabbling in Normal .  My main goals are to not eat any processed foods, and to eat out less.

This week I did pretty good.  Still ate out more than I’d like, but I normally ate real food even when we ate out.  Hubby is having a much harder time at this than I am.  We had a friend over on Saturday to watch movies, and the two of them filled up on snack foods.  They really have a weakness for cookies, chips, ice cream….  When I wanted a snack this week I had nuts, a pickle, or a little cheese.  Or just a little bit of left overs.

This weeks Dinner Menu plan, not in daily order, just things we’ll be eating this week:

  1. Stir Fry (I’ll be using beef this time)
  2. Chicken Nuggets with sweet potato fries
  3. I’m craving Macaroni and Cheese so we’ll probably have some of that.
  4. Homemade Pizza
  5. 2 days we’ll have left overs, or soup I have frozen.

It looks like I don’t have recipes for any of these meals posted yet (except the Chili), or I’d like to update the recipe.  I will do that as I cook them.

Breakfast and lunch menus:  We’ll be having eggs with veggies for most breakfasts, we will probably have GF pancakes one day.  For lunch we will have leftovers from dinners, or salads.
