Back when I posted about the Thai Kitchen bowl when I was searching for Ramen Noodles, Stephanie mentioned that she had tried the Pad Thai and she liked it, she also said that it made enough to serve her 3 times. So I thought I'd look for it. I did find the Thai Kitchen Pad Thai but it had too much sodium for my low sodium diet (I know I haven't been following like I should, but I'm getting much better, and so are my ears because of it I think!). However, on the same shelf I saw A Taste of Thai and it said it had Reduced Sodium in big letters on the back, so I looked and it really was lower in sodium! Just 340mg per serving, compared to about 1000mg. I can work that into my 1500mg per day. So I bought it.
I made it like the instructions on the box told me to, except for one thing. It calls for 1/3 cup chopped peanuts and I really thought I had peanuts, but I didn't. (I think my darling husband has been snacking again). So just to get the flavor I put a little bit of natural peanut butter in it. It actually worked quite well.
Next time I'll add more veggies! I love lots of veggies in my Pad Thai. Oh, and yes, there will be a next time!
This was a delicious meal and it made way more than my husband and I could eat as just a serving each.

After seeing this label, I was curious so I went to A Taste of Thai's website and found out that all of their products are Gluten Free and have been since October 1st, 2008. They have also worked hard to reduce the sodium in all of their products. Their products contain "at least 25% less sodium than before and at least 50% less sodium than the average similar product".
