Here's a healthy and tasty way to eat your zucchini! I love fried zucchini. Especially when it's smothered in ranch! YUM! BUT, here's a healthier way that we like to eat them at home - BAKED! I already had an egg wash/breadcrumb mixture going on because I was making Chicken Cordon Bleu , so I repurposed those ingredients for this. Don't worry, I dipped the zucchini before the chicken! 1 egg + 1 T water1/2 C breadcrumbs 3T parmesan cheese, grated 3T ramano cheese, grated
Cooking spray Preheat your oven to 425. Cut your zucchini into sticks - about 1/2" by 3". Dip in egg mixture, then into breadcrumb/cheese mixture and place on well sprayed baking sheet, and top with more spray (so they brown). Bake for about 25-30 minutes until nice and golden brown. Top with additional cheese.
