Vet Visit and Mundane Meals...

JUST ONE MORE DAY TO ENTER MY OIKOS YOGURT GIVEAWAY!!!!!!!!!!!!!!

Well, we took Dickens to the vet for the first time yesterday. Here we are in the car enroute. I was a little nervous. A little nervous?... Momma was a hot, nervous mess! GF Guy was cool as a cucumber walking Dickens into the office. Meanwhile, I was cowering in a corner with my stomach in knots. Who am I?! Can you imagine what I would be like if I ever had a child?! GAH! Dickens was not too thrilled with the doctor (whose first name was Flake... HAHAHAHA!), but he was a good boy and put on a brave face. He was too cool to pose for the paparazzi.
I worked until 8:30 after the stressful vet visit, so dinner was a repeat of Spicy Thai Green Curry with Quinoa. Dessert was the last of the Cookies N' Dream Ice Cream. What should we make next?! I also had a Comfort Muffin for a little snack attack. Then, I made like Dickens and fell fast asleep. It was, after all, a BIG day for us!

Today's eats were equally as mundane. To start the day off, I spilled half a bag of Bob's Red Mill Gluten Free Mighty Tasty Hot Cereal all over the kitchen floor. I just looked at it, turned around, and made coffee. I have zero emotions before my coffee! I had enough hot cereal left to cook up a pot while the coffee brewed. Since I prefer this cereal "leftover", I put it into the refrigerator to cool while I got ready for work. Then, I reheated it with a bit more Water, Almond Milk, PB2, and frozen Organic Blueberries. Not my beloved Gluten Free Oatmeal, but it will do in a pinch.
The lunch I packed for work was Spicy Kale Salad topped with 4 lovely little Scallops. I was once again surprised by how filling the Kale Salad is! It kept me full until supper time! WOWZA!
GF Guy suggested sushi for dinner and I jumped on that like a [insert joke here]! I know, I know, lazy... SO SUE ME! I can't be your kitchen inspiration every day! ;-) I had my usual Brown Rice Veggie Roll

with Bragg's
instead of soy sauce. I also tried a new kind of chip, Lundberg Wasabi Rice chips.
I only ended up eating one. These chips were a bit disappointing. I was expecting more of a Wasabi flavor. Shmeh...
I'm probably going to eat a bowl of cereal with my homemade Raw Almond Milk goodness before bed since we ate dinner so early. We shall see. I hope you all have a fabulous evening. I hope to have a new recipe for you tomorrow along with an Oikos Giveaway winner!!!!
