Ok, I now that not everyone has been waiting with quite the enthusiasm of myself and my daughters but since it is SO close, I can share just how happy I am about the new TJs in Bellingham. Even before I was gluten-free, TJ's has been a place of interesting and nurturing foods. When I was living in Portland, attending medical school, you often found me in their aisle gathering study aids and thinking about the next potluck party.
Now being gluten-free, TJ's has been a major part of our flexible lifestyle. My girls love thier brown rice bread, organic brown rice pasta and lots of the crackers, chips, etc.
So come and check out thier gluten-free goodies starting at 9am on Friday the 28th. You'll see me with the girls just after school. That is what they want to do with their Friday afternoon. If you don't have a TJ's near you, I am so sorry. I'll be posting more recipes soon.
