Today's weather was perfect for apple picking. We headed a little over an hour West into the Virginia countryside. The apple orchard was picturesque on this beautiful fall day.
Preheat oven to 350*
Cut apples into small pieces (I didn't skin them - it takes so much time without proper tools)
Spray an 8x8 pan with cooking spray (evoo spray works great)
Add apples to the pan
In a bowl, combine the following ingredients:
1/2 cups of gf oats
1/2 cups of gluten free all purpose baking flour
2/3 cups of packed brown sugar
4 tbsp of melted butter
1 tsp of cinnamon
1/2 tsp of nutmeg
Spread the topping over the apples and pack it down
Cook for 30-40 mins
Serve with vanilla ice cream:
