I've been reading more and more about how the cost of food is rising, the cost of everything is rising. Rice? Price has shot up due to the natural disasters in Asia. Corn? The Midwest floods swept away half the corn crop of the year, pushing the Price of corn up and up. Wheat? Forget it, wheat production is down because there is more profit in corn. Fresh veggies and fruits? Expensive to ship now that fuel is costing upwards of $4 a gallon. So how are we as food allergic people who NEED to be picky and CAN'T just pick up a bag of any old chips or M&Ms at the store for 99 cents supposed to eat on the cheap? How are we people who actually want to eat healthy supposed to eat good whole foods on a budget?
I dug through the pantry today to figure out what to eat for lunch for the week. Payday is Friday and the bank account is running on fumes, so I had to come up with something. I pulled out: canned peas: 79 cents. Canned corn: 99 cents. Diced tomatoes: 89 cents. A can of Goya pink beans 99 cents. One cup of uncooked rice, est: 75 cents (from a box of brown instant rice) and the big ticket item: turkey tenderloins $6.64- they were frozen, I cut them up into about one inch pieces. I cooked the turkey, threw in some Goya spices to perk it up a bit. Added beans when the turkey was almost cooked through. Tossed in the diced tomatoes. In a seperate pot I cooked the brown instant rice and mixed in the canned peas and corn. Then I pretty much threw it all together in an even bigger pot and there we go! It aint beautiful, but man did it taste yummy!
It made about six servings, I already divided them up into seperate containers ready to go for a weeks worth of lunch. Total cost: $11.05, so the total cost per serving was about $1.84. Not too bad I have to admit!
