Sunbutter cookies

A woman came into Wholefoods the other day to do a demo ofSunbutter, which is a peanut butter-like product made from sunflower seeds. Apparently it's magically good for you, and is pretty delicious. It tastes like peanut butter, but is peanut (and tree-nut) free, and also at the same time tastes like sunflower seeds. I had been thinking about other kinds of things I could use to makeShauna's flourless PB cookiesI like so much, like almond butter, soynut butter, etc. The Sunbutter lady sold me on Sunbutter, especially since it says "Gluten Free!" on the label. That's always a seller. So I made these cookies, Alex had the boys over to watchThe Wire, and before they disappeared to watch they jumped on my cookies and ate half. They taste like sunflower, but cookies, and really good. Alex, who doesn't love peanut butter, loves these. I bet when I get back downstairs there won't be any more left.

Sunbutter Cookies

1 c Sunbutter sunflower seed butter

1 c brown sugar

1 egg

1 t baking powder



Preheat the oven to 350. Cream the butter and sugar, then add the egg and baking powder. Mix thoroughly, then form into quarter-sized balls and roll in granulated sugar. Bake 10 minutes.

Also good spread with Nutella and sandwiched!
