What says fall more than cinnamon spice mixture. Cloves, ginger, allspice… and pumpkin. Ahhh. I do love pumpkin rolls and even though the current temp outside here in Scottsdale, AZ is 103, that doesn’t mean that I can’t celebrate the first day of fall with a fragrant and delicious favorite. Of course, this isn’t the standard gluten-free pumpkin roll of years past. No, this one has to be sugar-free and low-carb to fit my diabetic lifestyle.

So simple – it was almost too easy! Just a few substitutions and I was able to enjoy a huge slice of what most folks would consider waaaaay out of bounds for someone watching their sugar and carb intake.

I was surprised to find that canned (*plain*) pumpkin is really quite low in carbs. 1/2 cup has 4 net carbs. Really, that’s it. That’s so minimal that it’s hardly worth mentioning. I was fully expecting to find this particular treat to be a definitely never-again-to-be-enjoyed-by-the-likes-of-me dessert as I ignorantly assumed that the pumpkin would be a carb-breaker.

In a surprising twist, the almond flour that I used actually made for a denser, moister roll than in my previous gluten-free version. Did I mention that it tastes *just* like a “normal” pumpkin roll? You could serve this to anyone, anywhere, and they’d never know it was gluten-free, sugar-free, and very low in carbs.

The entire roll has 23 carbs, not counting the sugar-substitute. I no longer count those carbs as extensive testing (aka: eating spoonfuls of the different varieties and then testing my blood sugar at different times after ingestion) has shown that these have zero impact on my personal glucose levels. That being said, your body may be different so if you are someone who reacts to the sugar-subs, you’ll want to figure in those carbs.

23 carbs. Let’s put that into a real-life equation. A normal-size Snickers bar has 33 carbs. Would you rather eat 1 little snickers bar or an ENTIRE pumpkin roll… for 10 fewer carbs? Not that I would ever recommend eating an entire dessert that should realistically feed 6-10 people by oneself. I’m just saying… a very generous serving of this dessert results in 4 carbs. That’s it!
