Shortcut Risotto

Hey all! I hope everyone had a delicious gluten-free Thanksgiving. I enjoyed gf stuffing, gf gravy and loads of other naturally gf treats! I've been slacking in my blogging recently and it's not because I have no-love for the blog world but rather I've just been so busy and haven't been cooking new exciting things. See, I could bore you with my same old oatmeal or gf pizza creations but I really only like to post about new things in my life or in my stomach. And when I am not cooking new then I just don't feel inspired to post. BUT don't haste, last night I did try something new... Risotto!! Well no... I did not make it from scratch (who has that kind of time on a Monday night) but I did it semi-homemade style!

I found this box in the gf section of my local grocery store. It yields 4 servings at 140 calories/serving (not too shabby if I say so myself).

 I then decided to spruce it up some some steamed broccoli.
I also sauteed some asparagus and green beans to add to the plate. Some how roasted sweet potatoes found their way onto the pile as well :)
It was delicious, chocked full of veggies and the whole meal took about 30 mins from start to finish (Rachael Ray style). Matt even liked it!
Oh, my time has also been absorbed by these two cuties. Getting a second dog was SUCH a good choice!
