Shaved Celery and Apple Salad with Honey-Lemon Vinaigrette

What do I crave when I am super busy and stressed? Well, you would think a juicy hamburger, but really I prefer a simple salad. It must be the crispy vegetables flowing through the tangy vinaigrette that gets me every time. I prefer a balsamic based dressing over the fat-loaded cream based dressings. Learning how to make a simple vinaigrette can go far in the kitchen. You can use it as a salad dressing of course, but also as a marinade or simple sauce for vegetables and meats. In fact, yesterday I had a steak craving and marinated some filets in this vinaigrette for thirty minutes at room temperature. The meat was bursting with flavor. Good thing I have leftovers waiting for me in the fridge.

Shaved Celery and Apple Salad with Honey-Lemon Vinaigrette

Ingredients:

2 small stalks of celery, with leaves

1/2 apple, cut into 1/2 inch pieces

Zest of 1 small lemon, plus juice

1 teaspoon balsamic vinegar

1/2 tablespoon extra virgin olive oil

1 teaspoon honey

1/8 teaspoon salt

Instructions:

Using a Titan peeler (or vegetable peeler), slice celery into small strips (like noodles). Chop apples into 1/2 inch cubes and place on top of celery strips in a small bowl. In a separate bowl, whisk together olive oil, vinegar, lemon zest, lemon juice, honey and salt (vinaigrette ingredients). Pour over celery-apple salad and mix together. Top with minced celery leaves and freshly shaven parmesan cheese.
