Hi-de-ho Neighbors! Happy November! Long time no see! Life has been crazier than usual lately. Cooking has been on the back burner, which makes me sad. Oh well, it is what it is. November is, by far, one of my favorite months. The air begins to feel crisp, as if on the verge of something exciting and new. People become nicer. Family draws closer. The holidays are in the air! Speaking of changes, my body has not yet adjusted to the time change, which means I have been waking up earlier than usual. This gave me a bit of time to "play" this morning. I knew immediately what recipe I just HAD to try.... The Gluten-Free Homemaker's French Bread Rolls
I made a few changes due to a lack of exact ingredients. I substituted regular yeast for the instant yeast. I had to increase the amount of yeast from 1 1/2 tablespoons to 5.625 teaspoons, due to this change. I then proofed the yeast in the water with 1/2 teaspoon of sugar before adding it to the dry mixture. The other change I made was using only 1/3 cup Tapioca Starch and the rest of the amount was Corn Starch. This change wasn't due to "divine inspiration" or anything. I merely ran out of Tapioca Starch.
The French Bread Rolls turned out perfectly! GF Guy was thrilled. Personally, I was thrilled to find a French Bread type recipe that didn't call for French Bread pans. (which I don't own)
I can't wait to try this recipe again on a larger scale. Personal Pan French Bread Pizzas anyone?
In other news: My birthday is next Friday!!!!!!!!!!! Whoot! Whoot! I'm not going to get too excited, both GF Guy and I have to work that day. Maybe we will be able to celebrate later this month.
