Rice-mellow Dreams

Posted Dec 20 2008 5:56pm
Christmas is almost here!!

Can you believe it?? I'm so not ready! Well I guess I am but I still need to buy presents for the Peanut's Nana and Aunty Michelle. Two of her most favorite people outside our little family! Other than that, I need to wrap, wrap, and wrap some more!

This Sunday is the Peanut's first ever Christmas party for her friends at school. This is no ordinary party however, because you see. Someone decided they were crazy enough to host a Christmas party at their house for their 6 year old and 7 of her little friends.

Yea suckas.. ME!

What the heck was I thinking? Again, weak moments! I gotta stop having those so I don't get roped into doing scary things like this! Birthday parties are no problem for the Peanut. Her birthday is in July and we can literally throw them all outside and sit and watch them run all over the yard with a few balls and a hose. Fill up some water balloons and the party is a rockin' good time.

This is a little bit different for me! There is a theme and a timeline and dang it... snow on the ground outside! We had a "blizzard" today so there will be no letting the kids loose at this party!

So what I've decided to do is the following:

1. crafts (I bought a few crafty items at Michael's)
2. Christmas Carols (I hired a pianist! ok... its my dad, but the kids will love it!)
3. lots of goodies!

My challenge this year is that one of the Peanut's friends is not only allergic to tree nuts (easy right? no nuts at the party!) but she is also allergic to EGGS. Everyone knows by now on here, even with my Gluten and Dairy free diet I still eat eggs and use eggs like they are going out of style.

I wanted to make sugar cookies for them to decorate with frosting and little sprinkles and such. I found a sugar cookie mix to use that does not require eggs! I'll be making those tomorrow morning! Tonight I made my other egg-free treat. Along with being dairy and gluten free! Yippee!

I used for the very first time: RICEMELLOW CREME!

The website says that this is a vegan, kosher, gluten and fat free "fluffy" product that can be used in place of regular marshmallows. YUM.

I was making Rice Krispie treats! This time with a little bit of Christmas spirit. I used a basic Rice Krispie treat recipe and dumped in tons and I mean tons of little red and green sprinkles. The result was scrumptious! I sampled a tiny teaspoon of it and literally could not taste the difference between MY treat and the normal homemade krispies...

my recipe: 6 cups of Organic Crisp Rice (these don't contain Marley extract- therefore being gluten free), 4 tablespoons of melted margarine, one container of Rice-mellow Creme. I mixed the margarine and rice-mellow together and dumped it into a big bowl of Crisp Rice. Then I poured the mix in a greased (with margarine) 9 x 13 pan and I was totally ready for a nice Rice Krispie Treat. Too bad I have to wait until Sunday for the finished product!

For now, here are the yummy pictures. Oh goodness marshmellow-ey goodness!
