Recipe Revisited–GF Olive Garden Toscana Soup

This post was originally posted in February of this year, but with the cooler weather being forecasted for this weekend, it’s time to revisit!!

An Italian Feast…in Huntersville

This past weekend, my family had a get together to continue celebrating my bestie ’s birthday. The theme of the party, as chosen by my sister, was Italian Feast. There were big plans for homemade noodles, meatballs, and chicken parm. But I was most excited about a new soup that my sister was going to make.

This soup is an exact replica of a soup at The Olive Garden: Zuppa Toscana, which I’d never had but have heard is really great.

It’s pretty easy, and DELICIOUS! Kale- yum, Sausage-yum, Potato-yum, Bacon- DOUBLE yum!

My sister followed this recipe , but instead of bouillon cubes and water, she used Rachel Ray chicken stock. She also made her soup in her kitchen kettle. Do you guys have one of these? One of my good friends gave us one as a wedding gift, and we just love it!

But back to the soup. Creamy, dreamy with a little crunch. Easy to make. Quick to eat. I highly suggest making this soup; I know it’s going to go on my menu for next week!
