My younger Glutigirl loves beans. She eats them all the time. The other night she came home from work starving and we had already eaten dinner. With no leftovers in site she managed to come up with her own recipe….beans and quinoa queso.
She cooked the quinoa according to directions. In a skillet she sauteed some onion and green peppers in olive oil. When they were tender she added a can of drained and rinsed beans, the quinoa, salt, pepper, a pinch of cumin, and shake or two of chili powder. To make it really teen worthy she add several large spoonfuls of Tostito brand cheese queso dip. She assured me it tasted better in the gnome bowl by the way!
