Magic Chia Seed Bread

Finished exams yesterday! It feels so good to just relax and not the feel guilty about doing something aside from studying. I have 4 months holidays for the summer now and the only thing I have to think about is choosing my subjects for next year, but i can put that off for a least a couple of months!

So, this is a recipe I have been testing out and i think I have finally got it right. (after a few mishaps with uncooked middles!) I added magic to that name since it is so easy yet so yummy, really low fat and the chia seeds pack the bread with nutrients! I think the chia seeds are the reason this bread works so well and has a ary texture while holding together well.

I like the bread with both savory and sweet flavours. You might hate me for telling you this but it is sooooo good heated in the microwave then with a bit of pure maple syrup drizzled over it. Just writing this makes me want some more!

Magic Chia Seed Bread

  • 1 egg
  • 1 1/4 cups lactose free milk
  • 1 tablespoon oil
  • 1 teaspoon sugar
  • 1 tablespoon Chia Seeds (I used black ones)
  • 1 cup gluten free flour mix (I used Organ)
  • 1/2 cup buckwheat flour
  • 1/2 cup chickpea flour
  • 2 teaspoons xanthum gum
  • 2 teaspoons instant dry yeast









Whisk egg, milk and oil together. Add the rest of the ingredients and stir until combined. (The mixture will be quite sticky and kinda like a cake batter. Transfer mixture into your breadmaker pan and set the breadmaker to basic (or gluten free if you have it, I dont!) and 1.5 lb (also I chose medium crust but i think dark would work too). Press Start and wait....When it is finished remove from tin and place on cooling rack. Once it was cool i sliced it and froze the slices in individual serves (saves trying to cut through a frozen loaf!)

P.S also once the breadmaker had finished mixing I reached in and pulled out the paddle so i wouldnt have a hole in the finished loaf, but thats not essential.

P.P.S You could try just putting all the ingredients in your breadmaker without mixing them first but i find my breadmaker doesn't mix gluten free flour in properly and it all get stuck up the sides.
