So, obviously my post have become less frequent. This is primarily (oh heck, eniterly) due to the fact that I am in the middle of my busy season at work. This is my second year at it and I have to say that things are going much better this time around. I have a much better outlook, know what I'm doing and I've been staying gf through all of the madness. I truly feel like it has help with my energy levels throughout the day and sleeping better during the night. And even though I haven't been blogging about it all, I have been trying all sorts of new things to keep up the gf lifestyle. Here is just a little sampling (it sure has been piling up):
Dark Chocolate GF peanut butter brownies: (layer in broken up dark chocolate and swirl in organic chunky pb - serves well with vanilla soy ice cream)
Baked veggie GF pasta: (layers of cooked gf fussili pasta, tomato sauce, assorted veggies, fresh chopped garlic, cheese on top - bake for 20-30 mins at 350*)
A drawer for snaking: (better options than the vending machine)
Mexican pizza: (corn tortilla, layer of refried pinto-beans, layer of Mexican cheese, topped with fresh salsa - bake for 10-15 mins at 350*)
Oatmeal creation: (gf oatmeal, defrosted frozen banana, tbsp of almond butter, dash of cinnamon and sweeten to taste)
Pure bar: (from TJ's, comparable to a Lara bar)
Crunchy Green Beans: (super yummy to munch on)
I hope you guys can get some good ideas from my exploration!
On a closing note, here is my little guy... not happy with me leaving him in the morning.
