I am always trying to find some yummy treats for my daughter. I have made these before using just regular cake mix, but did you know you can also make them gluten free!
First of all, I used these GF Ice Cream cones Let’s Do Gluten Free Ice Cream Cones, 12-Count Cones (Pack of 12) You could give these to someone who does not eat gluten free and they would never know! So good!
So you prepare your favorite cake mix and fill the cones 1/2 way. The first time I put too much batter in and they overflowed. Try one or 2 at first to be sure you don’t over fill them. Bake in the oven 20 min or so…keep an eye on them. Take them out and let them cool. Top with your favorite icing and sprinkles. We used Betty Crocker white icing for these! 1 cup sugar
2 large eggs
1 1/4 cups Brown Rice Flour Mix
1/4 tsp salt
1 1/2 tsp baking powder
1/2 tsp xanthan gum
1/2 cup canola oil
1/2 cup milk
1 tsp vanilla ext.
Heat oven to 350. Beat sugar and eggs until combined. Add the rest of the ingredients beat medium speed for 1-2 minutes. Pour batter into cones no more than 1/2 way. Bake about 20 min but watch closely. I set my ice cream cones in a muffin pan. Remove from oven, let cool and top with frosting or candies. Oooohhh so yummy!
