Eek! Judi,

I'm distressed by your quesiton. For one major reason anyone who has been diagnosed with Celiac should not be eating an grain carbs let alone lots of them.

As a certified holistic nutritionist I first would tell you to totally get off grains; refined, naturally or otherwise.

The absolute best diet for anyone and especially celiacs and people who suffer from diabetes is the Paleo diet. Have a look at Robb Wolf's website and get the basics.

With a vegtable and healthy lean meat, nuts and limited fruit diet you can thrive!

I think I have Celiac Disease because of malabsorption. I've been so anemic that I had to have a blood transfusion-3 units. I didn't know what was wrong with me. I went to the ER and I was admitted for 4 days. From my systems I think it's Celiac Disease. Maybe we could discuss this.
