Hanukkah Recipe Day 6: Gluten-Free Noodle Kugel

It was several Hanukkah's without Noodle Kugel after I was diagnosed with celiac disease. But thanks to several gluten-free vendors making delicious gluten-free pastas, Noodle Kugel is back on the Hanukkah menu.

Vanessa's Gluten-Free Noodle Kugel
Yields 6-8 servings

1 package Gluten-Free Spiral Pasta, cooked
4 tablespoons Butter
4 Eggs
2 cups Sour Cream
2 cups Cottage Cheese
1/2 cup Sugar
1/2 cup Ground Cinnamon
2 cups 2% Milk

  1. Preheat oven to 375 degrees F.
  2. Boil water and cook pasta according to package instructions. Stir in butter and set aside.
  3. In a mixing bowl whip eggs. Add sour cream, cottage cheese, sugar, and ground cinnamon to eggs and stir well. Pour mixture over noodles and stir together. Pour milk over mixture and gently mix. Sprinkle cinnamon sugar on top before baking.
  4. Bake for 60 minutes until kugel sets. Serve steaming hot!
