These are so good! So light and buttery tasting! I was inspired by a pinterest post I found, but used my gluten free flour blend to make it a gluten free success! These are sodium free, egg free, and could be made dairy free as well!
Cream together the first 3 ingredients. Add the flour and continue to mix well. Drop the cookie dough by the teaspoonful on a cookie sheet and bake at 350 for 10-12 minutes. Let them cool completely before removing from the cookie sheet. These are delicate cookies and will crumble if not handled carefully.
Once cooled completely, you can eat plain, or add some icing.
We added some icing. We (me and my oldest) experimented some. This is what we came up with and loved it!
Lemon zest of 1 lemon
1 cup of confectioners sugar
Juice from the lemon approx. 1-2 Tbsp.
Mix together but start with the 1 Tbsp. of lemon juice 1st, you can always add more. You want the icing to be a consistancy that you can drizzle over the cookies. Once to this consisitancy, do just that…drizzle the icing over the cookies. Let the icing set, then enjoy!
