It is so hard to believe that Thanksgiving is next week!! Are you ready? This is week 3 already of a Gluten Free Holiday. Be sure if you missed the previous weeks that you check them out. Some really great ideas and recipes out there.

This is one of my favorites! Holiday Peppermint Bark
6 ounces chocolate candy coating
3 ounces mint chips (I used Andes)
9 ounces vanilla candy coating
1/4-1/2 cup chopped peppermints
It is best when starting this recipe that you already have the peppermints chopped, and that you heat the chocolate and vanilla in separate bowls at the same time, otherwise the chocolate becomes hardened and it is difficult to work with.
Melt all 9 ounces of the chocolates together until smooth. Spread onto an aluminum foil lined cookie sheet. Immediately take the vanilla flavored melted candy and pour over top of chocolate. Take a spoon and swirl it around. Immediately sprinkle peppermint candy over the top. Refrigerate until hardened.
Take out of fridge and break into desired size pieces for gift giving or eating yourself! Here is a cute way to share your peppermint bark. I put pieces in a star shaped glass dish, wrapped in cling wrap and tied with a festive ribbon.
