Since I graduated from college I have truly embraced my love of cooking. One of my (and my roommates) favorites is what we like to call "magic soup". We have coined it that due to its ability to fill you up on so few calories. Please try it out and send me your thoughts!
Ingredients-1 container of Trader Joe's Organic Roasted Red Pepper and Tomato Soup -1 bag of frozen vegetables (I prefer one with small veggies) -1 bag of "quick" brown rice -1 can of pinto beans -*Optional* tofu -1 tbsp of cumin -1 tbsp of chili powder -1 tbsp of garlic powder -Salt and peeper to taste
Combine in a pot and stir until all the veggies have cooked and the soup reaches a desirable temperature. Enjoy with some toasted bread (gf of course) and some yummy red wine. Serves 4.
