Although I have not been there myself to try brick oven “apizza”, I just learned that Olde World Brick Oven Apizza on Whitney Ave. in Hamden, Connecticut is now serving gluten-free pizza. I spoke to the owner at length today about this new addition to their menu. They purchase their dough from French Meadow Bakery, and the dough comes already rolled out on its own personal tray. Additionally, the pizza makers in the kitchen vacuum a designated area each time they prepare a gluten-free pie.
In case any of you are not from the New Haven area and you are wondering about the “a” prefix on the word pizza, no, it’s not a typo. Here in New Haven, pizza is apizza. You can read a little more about Apizza here. I get a thrill out of saying that word every time I drive by a pizzeria, and believe me, there are a lot of apizza joints in this area of the state so I entertain myself on a daily basis!
