Garden Fresh Cilantro

I harvested my first bundle of organic, home grown Cilantro yesterday.  It’s been so many years since I had any sort of garden, it feels like the first time, and it’s so exciting.  We have started small.  Potted herbs along the staircase that leads up to our door.  Cilantro, Rosemary, Basil, Chives and Mint.  They’re doing really well and I love walking out there everyday and seeing how much they’ve grow each day.

Nothing seems to drive home the sensation of bounty and abundance, than growing my own herbs/food.  Seemingly, out of no where, more plants pop up and after I cut some away, more appear.  It’s free,  save for the offering of water and love and sunlight, there is no cost to me to maintain them and reap the benefits.

The beauty is that you really don’t need that much room to grow a few well used plants.  Currently we have 6 pots of herbs that we started from small plugs and they will provide more than enough for our cooking needs.  From them, I’ll be able to make all I want, and share with others as well.

Likely my favorite herb, I use Cilantro for my guacamole, Thai recipes, pesto, Mexican dishes, soups, and salads.

I list my Cilantro plant under Pantry, because even though it isn’t a foodstuff that is easily stored in the kitchen closet, it is a provision that is there in my home all the time, ready to be used when needed.  I want to continue expanding our notion of a pantry to extend beyond a storage room for non perishable provisions, to the concept of having sustainable resources on hand all the time.  I see the herb garden I’m creating to fulfill the same purpose my pantry does, keep food I use regularly on hand and ready to be used whenever I need it.
