Found A Use For My Kale...

Well I was wondering why I bought kale the other night. I think it's because I am overwhelmed with it in the blog world. EVERYONE EATS IT. I've never tried it. Swiss chard? Yea, my grandmother makes it into soup after her chemo treatments. Spinach? Yep! Love it! But kale? To me it's just another leaf to throw in a salad. I'm not even sure you can put it in salad!

So I still have my leftover beans from when I made chili a couple weeks ago, so I thought I would try and make some soup. I mean lots of other bloggers are doing it... why can't I?

I decided to try the recipe on the back of the Bob's bean bag. I also decided to add a few things to it, to try and veggie-full it!

Here it is! My Kale-Veggie Soup!

You need: 2 cups of beans (soaked overnight), 3/4 cup of water, 2/3 cup of veggie stock (or chicken stock- whatever you have), 1/2 cup of red onion (finely chopped), 1 clove of garlic (really finely chopped), 3/4 cup of mushrooms (I forget what kind I used, but they were small), 1 can of corn, 1 teaspoon of chili powder, two dashes of cayenne pepper, and salt and pepper to taste. And for the magic ingredient: 1 &1/2 cups of frozen chopped kale
First I boiled the beans and the veggie stock and water, then brought it down to a simmer and let it simmer for three hours. Yes... it took that long. Be patient. Then I threw the remaining ingredients in. Then I stirred it all up and let it simmer again for another 30 minutes.

Can I just say yum?

I'm not one for savory meals. I like more sweet things. I don't really care about substance in food, I want the sugar! The sweet BBQ or teriyaki sauces.. the brown sugar on my oatmeal... chocolate chips in my banana bread. So it was a surprise to me that even though this is heavy on the greens and the veggies... it was really good! I added a bit more chili powder to ramp up the spice a bit, but hey- add as much or as little as you want! Or add different spices all together! I might try this again.. with some different spice, swtich it up a bit!

Overall? This is a great, pretty simple healthy soup. And it's naturally vegan (unless you use chicken stock) and gluten and dairy free.

I spooned several helpings into different containers and as you can see below- this will be my lunch for the next few days!
