Anyone who’s gluten free will tell you that one of the things you miss most, is the ability to eat on the go. Quick meals and gluten free aren’t always synonymous, but in the last four years I have been able to whip a few things up.
But last night I made myself a REAL TREAT that was ready in 20 minutes flat, with 10 of those minutes being prep before and assembly after.
A gluten free veggie burger topped with Cabot Sharp Cheddar and fresh spinach – smothered in ketchup served on two slices of Udi’s gluten free whole grain bread. Followed up with a side of Ian’s gluten free onion rings.
Oh yes. I said onion rings!
So dang good.
Honestly I was skeptical when I saw Ian’s GF Onion Rings winking at me inside the freezer on the frozen aisle. But I grabbed them and I’m so glad I did! Sweet onions battered thick with a crunchy cornflake topping. Baked crisp – so good!
My advice on the onion rings: cook 4 minutes each side instead of 5. They cooked quickly, so keep an eye on them.
