Cook Till The Cows Come Home

I literally spent the whole weekend COOKING. COOKING. BAKING. There were spatulas flying everywhere.. pans to be washed, recipes to be read, messes to be cleaned up. Thankfully I am a clean freak and managed to make the kitchen look like I never touched it. You're welcome Mom!

I made a few different things.. a couple for myself and a couple for Taste Tester. First up for Taste Tester. The first dish is neither gluten or dairy free and honestly I would have to experiment HEAVILY if I wanted to make it dairy free. Gluten is no issue in this case, it was a pasta dish, so you can just sub out the pasta for rice pasta. I made Chicken Alfredo! Easiest sauce I could ever make!

I used: 1 cup of heavy whipping creme, 1/4 cup of butter, and 3/4 cup of Parm cheese. Combined all of these over a low to medium heat and stirred until smooth. The sauce thickens up as it cools, it was still a bit too runny, nothing that a teaspoon of flour didn't take care of! There was no way I was going to eat this, so I just made it how an allergy-free person would eat. I cooked up some chicken pieces and some whole wheat pasta and combined everything together. It smelled delish! I hope he LOVES it!




Up next for Taste Tester was Salmon Teriyaki Stir-Fry! This one, I made so I could eat as well. I made my own teriyaki sauce to make it Gluten Free. Most Teriyaki sauces contain soy sauce which is made from wheat. I always wondered why I would get POUNDING headaches after eating Chinese.. well no crap Sherlock- it was the soy sauce!

Recipe as follows: 1/2 cup of wheat-free tamari, 1/2 cup of pineapple juice, 1/4 cup of rice vinegar, 1/4 cup of brown sugar, 1/4 cup of ketchup, 2 teaspoons of ginger, and garlic powder & pepper to taste.
Same as before, simply combine over low to medium heat and stir until its smooth. It thickened up as it boiled but if it is still too runny you can add a pinch of cornstarch (just not too much or it will turn to sludge!)

From there I poured some out of the pan and directly onto two nice pieces of salmon. I let the sauce soak into the fish for about 45 minutes and then baked them for about 14 minutes at 400. While these were cooking, I made rice. Plain boring rice. I know!!!! But hey.. I was making veggies to go along with it! I cooked up some "stir-fry" veggies- just a frozen mix bag from Target! When there was about a minute left of the veggies cooking I added the rest of the teriyaki sauce. YUM-O! All together and I thought I was eating out at some spiffy Chinese restaurant!




I ate some at dinner time and then when I went to go and stock up the fridge at Taste Tester's, I realized I forgot to take a picture of it! So when I fixed up his plate and had it all organized I had to take it back to take pic of it. OOOPS! "wait I need to take a picture of it!!" "Are you kidding?! I'm starving!" Tough noodles babe, food blogging calls me!!!!

Later on once I get DECENT pictures of the other stuff I made (which will be lunch for me all this week, I will post up my other recipes!)
