You know gluten-free has gone mainstream when major news
organizations including NBC's The Today Show are talking about Chelsea
Clinton's gluten-free wedding cake. Yes, that's right folks. Tomorrow
night, Chelsea Clinton will marry long-time boyfriend Marc Mezvinsky
with 500 guests watching. All of the guests will then enjoy a
gluten-free, vegan meal! How cool is that?
So, what does this mean all of us gluten-free gals out there?
When you get married you can have your cake and eat it too! And, let me
tell you, it's 100 percent true.
In case you haven't seen my daily countdown, my wedding is now just 72 days away! We're
having an entire weekend extravaganza with a rehearsal dinner, cocktail
hour, reception and morning-after brunch, all that are completely
gluten-free. When we started planning a year ago, I thought it was
going to be a huge challenge to plan a completely gluten-free wedding,
but it has actually turned out to be a wonderful experience that I will never forget... it just took a lot of planning.
We started by finding the perfect wedding planner. Ironically, we found this person in Corrinne Weins of Perfect Wedding Plannin g (the name says it all). She's a culinary school graduate and immediately embraced the
gluten-free concept and became a tremendous advocate as we searched for
the perfect location. We ended up finding that in the PGA National
Resort & Spa . Their team of chefs are incredible and really were
able to come up with a menu that is fit for a Celiac Princess! And of course our cake is 100 percent gluten-free. The cake will be made by A Piece of Cake by Elena and they will be using the Pamela's Products cake mixes in a spiced up and amazing way! I can't wait!
