Today is the third day that my office has been closed due to the snow. Needless to say, I am getting a bit restless indoors. I've been keeping myself busy with
plenty of work, trying some new recipes and digging through our apartment's stash of workout videos.
Last night I made some
gf pasta with homemade pesto sauce

2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-
Reggiano or Romano cheese*
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste
Combine in
Cuisinart (I've used a blender in the past) until desired consistency.
*I
substituted this cheese for a wedge of laughing cow light cheese to make it a little lower cal, and because my
roommie Lauren has an issue with some types of cheeses.
Then I
roasted some grape
tomatoes and pine nuts. Next, I
stirred the pesto,
tomatoes and pine nuts into the cooked pasta. Finally,
sprinkled a little
parm on top and enjoyed!
Gluten-free brownies were consumed over the weekend and everyone enjoyed them! This time I tried out a new mix by
Namaste. I am really enjoying their products, find them at a
Whole Foods near you!
I also made some yummy
french toast for me and my
hunny.
For him: Whole wheat bread
For me: Tapioca bread
Tip: Be sure to dip the gf bread into the mix first, you don't want to cross-contaminate!
