Banana muffins (high in fiber and protein, low in fat and NO sugar)

What to do with bananas that aren't quite as young as they once were???
Why, make muffins of course!



Banana muffins (high in fiber and protein, low in fat and NO sugar)


Sift together:
  • 1/4 cup buckwheat flour
  • 1/4 cup maize flour
  • 1/2 cup tapioca flour
  • 1 tsp xanthan gum
  • 1 tbsp flaxseed meal
  • 3 and 1/2 tsp gluten-free baking powder
  • 1 tsp vanilla essence 
  • 1 tsp each of cinnamon and mixed spice
Beat together
  • 1 egg
  • 1 and 1/4 cup lactose free milk
  • 1/4 cup low fat yoghurt
  • 1 cup mashed banana
Add the liquid ingredients to the dry ingredients. Stir only until just combined.
Bake in oven preheated to 180 degrees Celsius for 20 minutes.
