So…last night I did a little bit of line dancing, but not exactly on purpose…
My friend Elizabeth and I made a date for 5:30 Zumba. I was pretty pumped, but the location kept changing. We basically stalk this one teacher, Lu, because she is simply the best. She makes even the most uncoordinated person feel like they’re doing a great job. (<---- speaking from personal experience!)
So we finally found the location and the class. But then 30 minutes into sweating our buns off, another teacher came in. As it turns out, a line dancing class was scheduled at the same time as the last half of our Zumba class!
I was skeptical…
but most everyone in Zumba stayed to finish. Even Lu, she’s amazing, stayed and kept dancing. In the end…sweat is sweat right? And MAN, did I ever sweat!
When I got home I was pretty hungry, so I just started cooking components. Only, I wasn’t 100% sure as to what they were going to be components of.
I roasted sweet potato chunks.
I sautéed kale and minced garlic in a little coconut oil.
I caramelized thinly sliced shallot.
Then it hit me.
Sweet Potato, Kale, White Beans, and Caramelized Shallot – studded with feta cheese and 50% Light Cabot Cheddar. All nuzzled in a Rudi’s Gluten Free Tortilla.
I love it when accidental suppers work out
Parrish and I stayed up way too late watching The Following!
Not exactly what you want to watch before going to bed! So creepy but so good!
