I am not a huge fan of olives but I should be. Olives are a very healthy food choice. According to Science Daily, a study by the University of Granada and the University of Barcelona found that the waxy skins of olives offer natural protection against Colon Cancer. Other health benefits include: Rich in iron, vitamin E and copper, and a good source of fiber. Olives contain monosaturated fat, thought to reduce the risk of atherosclerosis and increase HDL (good) cholesterol. In addition, olives can reduce inflamation in asthma, osteoarthritis, and rheumatoid arthritis; help prevent heart disease, and decrease the intensity of hot flashes during menopause. Olive oil is the heart-healthy choice for cooking. It also prevents colon cancer. A Spanish study published in 2000 showed that rats fed a diet supplemented with olive oil had a lower risk of colon cancer than those fed safflower oil-supplemented diets. So, let's give this ancient fruit the respect it deserves!
