For so many months with the digestive troubles of chemo, food was not something that played much of a role other than nutrition. Even when I thought I wanted something, I could not taste it, especially sweets since my taste buds were all but numb. Between the digestive issues and my lack of strength and stamina, I had little desire to prepare food let alone cook anything more than hot cereal.
Since I have been feeling better, I have been enjoying getting back in the kitchen. I think I’ve mentioned my pressure cooker as one of my favorite kitchen tools. Today I had the thrill of using my food processor to shred raw beets. I had forgotten the magic of my Cuisinart. I had started to shred the beets manually. Hah, I was too tired to continue shredding after only about a fourth of a small beet. With the food processor shredding about eight beets took about a minute.
I have not eaten beets for a long time, and I have never eaten them raw. This is the first time I have used beets raw in a salad, and what a surprisingly delightful result. They are naturally sweet and crunchy, kind of like carrots but less dense. I made a sweet and sour dressing, and that was it. It was a delicious salad. I like the traditional shredded carrot and white raisin salad, and this was similar in texture but more flavorful. I can’t wait to experiment with it again.
Oh, and the red juice stains your hands only briefly. I suppose if I were having company, I might wear gloves . Otherwise, it is not a problem for me.
