Cooking for a change. It has been so long since I have cooked anything besides hot cereal or eggs, it was ecstasy today to be able to cook some brown rice and Brussels sprouts. Really, it’s been months since I have had enough energy to lift a pot on the stove or to wash it. Today I got out the pressure cooker, one of my favorite ways to cook veggies, especially beans and grains that can take a long time to cook. I cooked the sprouts in the microwave with a balsamic vinegar and walnut dressing while the brown rice cooked up perfectly in the pressure cooker in less than 15 minutes; without the pressure cooker brown rice takes about 45 minutes.
If you’ve been eating only white rice, you should try brown rice. It has a nice bite and a slightly nutty taste. Absolutely delicious. Plus, the nutritional value of brown rice far exceeds that of white rice. Mix in some wild rice (not truly a rice) for some textural interest. Wild rice and brown rice cook have the same cooking time.
