Now that July 4th has come and gone, our nation has celebrated our birthday with fireworks, food, fellowship and fun! When all the chores are done, and I’m able to do the things I enjoy – one of them is cooking and baking. My local CSA farmer (community supported agriculture) had an abundance of beautiful Roma tomatoes. So, this is what I did over the July 4th weekend….I canned salsa!
All of those lovely yellow Roma tomatoes and red ones and the big ‘ole red slicing tomates combined with the very hot jalapeño peppers are gonna make someone very, very happy!
Here’s a picture of the cobbler made with beautiful Texas peaches.
I also used Texas pecans all crushed up in the crust. Don’t ‘cha wish you were at my July 4th dinner?
