It sounds like the problem could be coming from the neck. Muscle strains or neck misalignments can make it difficult to swallow or cause other issues in the throat or esophagus. With only small space in the neck inflammation, malpositions and tight muscles can cause several issues. For example I recently saw someone who slept awkard one night and now has neck pain, he can't turn his head, and he is having trouble eating and drinking because it hurts to swallow.
He has gotten significant relief using a neck roll and getting muscle therapy along with chiropractic tretments.
