You must try this recipe! Texas Caviar...it is sofa king delish...I could eat it straight out of the bowl with a spoon and just to hell with the chips...
And maybe I did eat it straight from the bowl with a spoon. And maybe later that night I farted so loud I woke myself up. Whatever. Make it. You will thank me. I promise. And thanks to my BFF Melissa for my latest addiction.
TEXAS CAVIAR
1 can pinto beans 1 can shoepeg (white) corn 1 can black-eyed peas 1 can black beans 1/4 cup chopped celery 1 chopped red bell pepper 1 diced red onion 1/3 cup oil 1/3 cup cider vinegar 1/3 cup sugar or splenda
Drain all the beans. Combine oil, vinegar, and sugar in saucepan. Bring to a boil, stirring constantly. Cool. Mix remaining ingredients in a large bowl. Pour cooled dressing over mixture. Let set overnight. Serve with Scoop type chips.

What I will tell you is this...when you come home tired and hungry and maybe a little crabby from a fun filled weekend, knowing that what waits you at home are 5 ravenous cats and dirty smelly yucky laundry...and that's just mine after 2 days...
Well...half way into my chores, I needed some Texas Caviar...yet I had zilch to make it with, and I was already in sport bra and long t-shirt for bed (there is never any turning back once the bed uniform is on. NEVER) So, I did what years of art lessons didn't teach me...I got creative. I went down to the freezer and popped a bag of Mexican corn in the microwave, While looking in the cupboards for beans (and then remembering that Ward has some stupid ( I mean silly) allergic reaction (he means he doesn't like the taste) to all kinds of beans...so not ONE SINGLE CAN OF BEANS IN THE HOUSE! Not even one for the Mail Carrier Food Drive!!!!
All I can offer you is that in a pinch, Mexican corn does taste pretty okay served with Scoops.
