Vegan Bruschetta and YeastBread Recipe

This morning's smoothie was
2 bananas
2 golden delicious apples
a handful of fresh mint
2 tbs ground flaxseed
Water and blend.
I baked a loaf of bread yesterday
Put in a big bowl and mix together2.5 cups flour
1 tsp each sugar and salt
Mix together in a separate bowl
1 tbs active dry yeast
1 cup warm water

One of the challenges of the GFCF diet in our household is sandwich bread. Now there are plenty of GFCF sandwich breads out there, and plenty of GFCF sandwich bread recipes as well. The problem is that we are, by choice, yeast free ( YF ) too, and, of course, most sandwich breads have yeast. And the GFCFYFsandwich breads available at our local store

In making my bread, I use Fermipan Red, a Dutch yeast which gives excellent results without imbuing the bread with an offensively yeasty taste (as with brewing, the yeast should contribute to the finished product, not dominate it).

glycemic, higher protein mix, which is nice.
The primary difference between her bread and this adaptation is the removal of yeast and the substitution of goat's milk kefir... baker's trick. It works; this bread has a very crisp crust that you just don't normally find in GF stuff.
