I could eat soup everyday. It's quite possibly the perfect food. It can be made raw or cooked, from beans, lentils, veggies or fruits. The possibilities are endless. Lentil soup is one of my favorites, and even that has many varieties. There are brown lentils, french green lentils and these lovely redlentils.

What could be easier than a simple soup of redlentils. The leftover roasted sweet potatoes in the fridge will add a rich, sweet taste, and some cauliflower cut in small pieces will add nutrition. Just me tonight and I want enough for dinner and lunch tomorrow.

. Add one cup of redlentils. Stir to coat with oil. Add 4 cups stock of your choice. I used vegetable. I also added water, about 2 cups as this got thick. Simmer for 45 minutes... cooking they are. No need to soak. The redlentils are just beautiful and a bit milder flavored than the green.
The mint is what makes this soup.
Could be topped with yogurt

These are obviously not raw, but if you are transitioning to a plant and seed based diet, and crave a bit of cooked food on a cold, Winter evening, these are super yummy and easy to make. I also don't eat dairy products, but indulged with a small dollop of Greek Yogurt Sauce on the side. Yummmmy!
