My parents used to make this legendary dish, and maybe they still do. I remember it having chicken, apricot, prunes and most exciting – 40 cloves of garlic. Sounds a little odd (prunes?) but trust me when I say it was delicious.

Recipe from Cooking Light, September, 2003. Yes, you really use 40 cloves of garlic in the recipe, which become mellow and sweet as the dish cooks. Plan for about 5 cloves... drumsticks, skinned (about 1 3/4 lbs.)
1/2 cup dry vermouth or white wine
Pinch of kosher salt
1/4 teaspoon black pepper
Dash of ground nutmeg
40 garlic cloves, unpeeled

Here in all it's browned, slightly crispy-skinned, moist and tender glory is Nigella's Chicken with 40 Cloves of Garlic. The recipe that begat the Garlicky Chicken Soup I posted on Sunday. Easy, flavorful comfort food at its best and a great example of the recipes in Lawson's newest cookbook "Nigella Kitchen."

not substitute the pancetta, which you can substitute with smoked goose.
Chicken with Clove, Cinnamon and Chestnuts
(Pollo con Clavo, Canela y Castañas)

I have always loved cloves, but became even more enchanted by them when I learned they are actually tiny dried flower buds! These blue flowers originated in the Spice... Pitta and lower Kapha and Vata. They speed things up, working on the digestion, circulation and metabolism.
