Pineapple with mint and Prawns with mint & coriander

Pineapple with mint
You need
1 ripe pineapple
Juice of 1 lemon
Sugar to taste
2 drops of vanilla essence
Fresh mint to garnish
1 tablespoon mint leaves cut... the pineapple to coat well, then cover and chill until ready to serve.
To serve, arrange on a serving plate and sprinkle with the mint strips. Decorate with a fresh mint spring

Makes 1 shake @ 140 calories, 22 grams of protein, 6 carbs, 2.5 grams of fat
Ingredients:
1 cup Unsweetened Almond Dream
1 cup mint tea
1 serving Biochem 100% whey chocolate protein powder
1 tbsp Hersheys Dark 100% cocoa powder
1/2 tsp each guar gum and xanthan gum
2 big, fresh mint leaves

Makes 4 dozen cookies
1 stick (1/2 cup) Fleishmann's Unsalted Margarine
1 cup granulated sugar
1 egg
1/2 tsp. mintextract...)
For chocolate coating
1 cup Trader Joe's Dark Chocolate Mint UFOs OR 1 cup semisweet chocolate chips + 1/4 tsp. mintextract
1 tbsp. Earth Balance Buttery Spread

Ingredients:
1 package sugar-free, fat-free instant chocolate pudding
1 1/2 cup skim milk
1/2 teaspoon mintextract, divided
1 1/2 cup whip cream, divided.... In a separate bowl, combine 3/4 cup cool whip, 1/4 teaspoon mintextract and green food coloring. Pour on top of the pudding and spread until even.

in a glass dish in the microwave during 30 second intervals, stirring well after each. When chocolate is smooth, add mintextract and mix well.
Slather melted chocolate on one cookie... know, the classic chocolate sandwich cookies from Pepperidge Farm?
And not just any milano cookies…mint chocolate milano cookies, which are my very favorite.

essential oil to balance the flavors and make them come to life. If you don't have the essential oil use a natural extract, but the oil is superior in quality and taste. Like the mint, I use two kinds of vanilla (the seeds of the fresh bean, and a natural extract) to achieve a more multi dimensional taste.
