a huge fan of lentils because they’re quick to prepare with minimal cooking time and no soaking required and have a wonderful flavor that hardly needs to be tweaked. I’ve worked a lot with red lentils at home, but never with green and decided to be adventurous by picking some up from the Whole Foods bulk foods section.

The recipe for this lentil salad was given to me by a vegetarian former co-worker. I made some changes to it , most notably leaving out the olives called for in the original recipe because I don't like them. When I'm looking for a quick, easy, and inexpensive but delicious and nutritious meal, I put together a lentil soup. Lentils are low on the glycemic index, low in calories, and high in fiber and protein.
Lentil Soup
1/2 cup lentils (green or French)
1 onion, diced
1 carrot, diced
1 stalk celery, diced

This recipe is a staple side dish of mine that I’ve adapted and modified at length through the years. Both colorful and flavourful I think it creates a texturally interesting background for spicy curries and other East Indian flavoured entrees.

Here it is our lentil quiche failure that our lovely readers reminded us to look at it differently.
Maybe the recipe was not meant to be a quiche.
It is more suited to be called a pie . (thanks again Ana for coming up with the name)

as we could cook without propane (remember we live off the grid ). I have made about a dozen recipes in our stoneware Crock-Pot , and by far, our favorite is this vegetarian soup recipe that can be made with either split peas or lentils and is equally delicious!
