of meatloaf dinner is the sandwich leftovers for lunch the next day. I am so pleased to say that the lentilloaf did NOT disappoint! There was plenty left over for several days... it was just soooo good. Oh my gosh look at me changing up a recipe, who do I think I am, Jessica ?! ;)
I also ate the lentilloaf in a sandwich the next day with a pickle

LentilLoaf Leftovers

Sat 30 Jan 2010 5:19amLentilloaf is great to make for dinner, but the best part about it is when you have leftovers. It makes great sandwiches, almost like a pate. A slice of lentilloaf, lettuce, tomato, vegan mayo and a squeeze of mustard, on fresh bread served with a dill pickle. Feels like I am reading a deli menu.

Yesterday was my daughter's friend,
Lauren Flynn's, 20th birthday. We helped her celebrate with her meal of
choice ... LentilLoaf. When I asked her what she wanted....
LENTILLOAF
2 cups red lentils
spring or filtered tap water
1” piece of wakame (put dried wakame into a small cup of water for 3-5 minutes)
1 onion, diced
2 carrots, diced
3 ribs

Apple Nut LentilLoaf
adapted from Nature Nourishes
Ingredients:
1 cup dried lentils
3 cups vegetable stock
3 tbsps ground flax seed
1/2 cup water
3 tbsps olive oil... in a pot, and add stock.
Bring to a boil then reduce heat and simmer until liquid is absorbed and lentils are tender.
Remove from heat and set aside.

I'm please to share my Modern Lentil "Meat"loaf recipe today! This is one of those recipes that took some tinkering until I got it right. I wanted to impart the flavor... it! That's a total score in my book.

Red Lentil and Walnut Loaf

Thu 28 May 2009 12:23amloaf made from red lentils, rice, ground walnuts and flaxseeds, onions, garlic and lots of herbs from the garden - thyme, oregano, marjoram and parsley - served with a green... together cooked lentils, rice, onion mixture, walnuts, flaxseed mixture, and salt and mix well. Add more water if the mixture is too dry. Press into a well oiled loaf pan.
