This is the third full recipe I have to share with you guys from The Eat Clean Diet Vegetarian . I made these right before we went out of town and was rushing so bad I didn’t take my own pics. These were the perfect thing to pack for the plane and I just froze them for a couple hours before we left and they thawed while we were in the air.

What a mouthful. A mouthful of vegetables.
We stopped at the Country Pumpkin on our way home from the camp today. It was so great. This is why I love living in the country. Our bounty:
Which in turn yielded a dinner of corn on the cob with blue cheese butter and beets and shallots (a Moosewood recipe):

rarely go to vegetarian-only restaurants but if I can find one, that is a good place to start. Also, if you can find places that have eggs (I am a lacto-ovo vegetarian...
